1/2 tsp added 15 left in boil |
Recipe Notes
Bring 1 gallon water to 155F - 168F. Add specialty grain in muslim sack to water and steep for 30 minutes. Remove grain sack and let drain into wort. Add and boil DME, UME. Add hops and Irish moss at appropriate times. Add cinnamon and brown sugar last 5 minutes of boil.
Remove from heat and add HME. Add to fermentor and pitch yeast as usual.

Ferment 3 weeks.
Batch prime with 2.25 oz sugar. Condition for 2 - 4 weeks.

Substituted Briess Pilsen Light LME for Light DME because I had a bunch that needed to be used up.

Mixed up beer ahead of schedule. Poured in more LME
than intended should kick up the alcohol a bit, but not much.
Smelled great going into the fermentor. Tried putting ice
in the wort to help cool down. Not sure that is a great
idea. If I get an infection, that is probably to blame.
Placed the keg in the conditioning cooler to start off with. |

Got an update on the Mr. Beer ingredients. This recipe
went from .54 BU/GU to .70, making it very hoppy. Have to
see how it tastes. |

Moved Rutt from the conditioning cooler (about 62 degrees)
to the spare bedroom. It has not gotten over 66 yet, but I
am sure it will get up to 70 soon. |

The assistant brewers and I bottled in 14 12 oz and 3 liter
bottles. They didn't get a sample, but I did.
Perfectly good flat beer. The hoppiness seemed just about
right. Very excited about drinking this beer around mid -
December. |

The carbing phase is over, but I'm going to wait to put it in
the cooler until after BH Black has gotten past the crazy part
of fermentation. Put one bottle into the beer fridge and
will most likely taste on Thanksgiving. |

Wow. Great tasting beer with practically no conditioning
time. Will only get better. Seemed to be just the
right amount of bitterness / hoppiness for the malt in this
brew. Might consider just a bit more cinnamon next time. |

Moved 2 into beer fridge. Was going to move 3, but dropped
one which popped the top, so I had to drink one while watching
football. Great beer. I love the hoppy bitterness.
Next time might double the cinnamon just to see what it does. |

Had a liter tonight. Still love the beer. The
cinnamon really gives this beer an interesting taste I think.
At least I think that is the cinnamon. |

Sampled. Seems to be coming along well. Cannot
really taste the Cinnamon. I have decided to warm
condition for at least a couple weeks before adding to fridge.
But, that is sort of getting ahead of myself since it needs to
ferment for 2 more weeks. |

Sampled and bottled in 4 PETs and 12 12oz glass bottles.
Tasted very good going into the bottle. Batch primed with
55g of cane sugar. |

Put the bottles in my conditioning cooler. My plan is
to keep the beer in here until 6/25, but we will see how patient
I am. Tyler asked me when I will be trying this beer.
Not sure having a 7 - year -old ask about my brewing schedule
says something positive about my parenting ability. Hmm...
well, he did do the artwork for this one, so that is probably
why he is interested in it. |

Had 2 while watching game 4 of the NBA finals. Tastes
real good. Carbonation is not high as it should be.
Not sure why since I did not notice this with the Northern Amber
which was primed exactly the same. Think maybe this with
1/4 U.S. Goldings hops (sort of a combo of this with Northern
Amber) will be one of my "go-to" brews. |

Shared WW, WB, P&T, Northern Amber, Eric's Red, and Dragon
Spit with Jerry, Lisa, and Grammy. The girls actually did
not make it to this beer. Jerry said he liked it, although
not as much a WB, P&T, or Northern Amber. Still planning
on making this as sort of a hybrid of how I made NA and Dragon
Spit. I do like this as a dark beer. |

Drank a few more. The brown sugar sort of gives a
maple flavor I think. The only problem with this beer is
the lack of head. I think next time I make this I'll steep
some medium or dark crystal in to add some body. |

Finished the last liter. Head is fine when you know
how to pour, but carbonation can be up a bit (and will be on the
next batch). Am really looking forward to batch #2. |
