Dragon Spit II Ale

Another of my regular beers that I want to try to make with a non-Mr. Beer recipe is Dragon Spit.  Dragon spit was a wonderful example of a beer that really improved when I increased my hop flavor and hop bitterness.  Actually, I am so pleased with the Mr. Beer + Sheppy version of this, that I am a bit hesitant to reformulate it, but here we go.

For the base, I went with the malts from  a combination of The Brewing Network's Moose Drool Clone and D-Rock's Moose Drool Clone.  I hopped it up with columbus and goldings hops just like I did in the original version, keeping the BU:GU ratio about the same.  I also added in the brown sugar and cinnamon of the original to add just a bit of complexity and spiciness.

Should be another wonderful beer that I brew side-by-side with the original to compare.  Wow.  I'm going to have a lot of beer to drink with all these side-by-side comparisons.

I was considering trying the Fermentis English Ale Yeast S04, but given my attenuation issues, decided to stay with my US05 for this batch.

Mash Profile
Steep grains 30-60 minutes in 1 gallon water at 165 degrees.

Remove grains, and prepare to boil wort with total of 2 gallons.

Recipe Notes
Bring 1 gallon water to 155F - 168F. Add specialty grain in grain sack to water and steep for 30 minutes. Remove grain sack and let drain into wort. Add and boil UME. Add hops and Irish moss at appropriate times. Add cinnamon and brown sugar last 5 minutes of boil.
Remove from heat and add HME. Add to fermentor and pitch yeast as usual.

Ferment 3 weeks.
Batch prime with 2.25 oz sugar. Condition for 2 - 4 weeks.
