Boo Berry American Wheat (Previous Recipes)

 

booberry.jpgWell, while we were "on vacation" in Florida, the SheppyBrew Beer Model got a taste of SweetWater Brewing Company's Blue. She really liked it. It was a light - bodied blueberry ale. The blueberry was not overpowering, and I actually thought it was a pretty good ale.

If steeping, remove grains, and prepare to boil wort

Color / OG / ABV etc ... listed without taking into account the fruit.
Brew as a normal wheat beer. Add puree right into fermentor and rack wort on top of it. Ferment 60 - 65 for a few days.
Add blueberry flavoring at kegging time to taste. Start with 1oz and add another .5oz if you think it needs more blueberry aroma.

Brew day today with the Beer Model. Everything went well. Added blueberry to fermentor. OG 1.044.

Morning ... Kraussen starting to form. Temp strip says 62.

Added to secondary with blueberry puree and 1 oz extract. Also threw in just a little scoop of table sugar. Base beer at 1.014, making it 4.7abv. I will let this sit for a few days and decide if it is ready to keg. Should be drinking by mid-June.

Had some over the weekend. Good stuff. A bit of fruit in the beer makes it a little bit more hazy than I would expect. Tastes good, though.

The air-lock was clogged last night. Put in a blow-off tube. Fermentation is up to 70 and very active. Getting lots of blow-off. Not sure this will be ready to go to secondary on schedule. We will see.

Racked into secondary on top of two cans blueberry puree. Also added in about an ounce of blueberry flavoring. Sample tasted great. 1.008 puts the base beer at 5.2 abv. Color not as pink as I remember from last time.

Needed to put in a blow-off tube again yesterday. Just put the air-lock back on this morning.

Kegged today. Put a screen on my bottling tube to try to strain out blueberry bits. Think it worked well. Also have a screen on the dip tube. Sample tastes great. I will let the beer model decide if the keg needs more boo. FG 1.008 (maybe a bit lower). Goes right into keggerator for carbonation. Should be drinking next weekend.

Tasting good. It is coming out a little slow, so there is some sort of clog. I'm ok as long is this doesn't get worse. Hoping I won't have to rack out of this keg. Could probably stand a bit more carbonation, but I think this is ready for the Beer Model to drink.

Took a sample of the beer. 1.010 fg. Good wheat flavor on the base beer. Today will be the day we add blueberries.

Took a sample after having been on blueberries for a couple of days. FG down a couple points at 1.007. Looks like pink lemonade. The blueberry flavor is very subtle, which allows a bit of the wheat flavor to come through. Could probably have gone with one more can of blueberry. I'll let it sit until the weekend and then keg it up.

Kegged and bottled yesterday. Had an issue with the first bottle. The tip of the beer gun came off. That first liter may be suspect, but I think all the other bottles should turn out fine. Got 16 12 oz bottles and 2 liter bottles. Blueberry really subtle. Not sure I would be able to identify it as blueberry if I did not know already.

Apparently I got blueberry chunks in the keg, because it is totally clogged up. I guess I will have to transfer.

Transferred yesterday into another keg. Put a screen on the dip tube, which will hopefully prevent the clog from happening again. Tried a little sample. Certainly not enough blueberry to call this a blueberry beer. Might try to find some blueberry flavoring to add to the keg.

Yes, the amount of blueberry in the kegged beer is perfect. Really liking this beer. I doubt the bottled beer tastes like blueberry at all.

The Beer Model killed the keg last night. Still have bottles, but they are not the same.

Had a bottle with the first football game. Purplish pink. Just a touch of blueberry flavor. I like it.
