The SheppyBrew Brew Master published a blog article in 2014 in which he publicly declared Bud Light Lime one of the "9 Beers I don't Drink".

In 2015 ... I posted an April Fools' Day post: SheppyBrew Going Professional. One of the flagship brews of my fictional brewery was going to be "Bud Light Lime" ... which would actually be Wetta Blonde Ale

No limes.

At some point in the summer of 2020, I thought I'd resurrect the name, and brew a Bud Light Lime. 

No limes.

Light colored. Fairly light in body (for a homebrew). I wanted a fair amount of Saaz hop flavor ... which might be mistaken for lime if you had a beer called "Bud Light Lime" biasing drinkers to look for a lime flavor.

After brewing it once, the name didn't amuse me as much, so I decided to call it something else. 

Since it was a Mexican Lager, I decided to go with a Spanish name. Since it had no limes, I went with "Sin Lima", which google translate tells me is "Without Lime". Sounds pretty good to me.

If steeping, remove grains, and prepare to boil wort

Recipe Notes
Formerly known as Bud Lite Lime, but I decided to change the name.
No actual limes are harmed in this beer.
Make 1.4 liter (6 cups) yeast starter a day before brew day.
Brewing salts in the mash water. This should bring Denver water profile (as defined by BeerSmith) to
Ca=90,Mg=14,Na=21,SO4=156,Cl=66,HCO3=104
Brew as directed from recipe.
Cool wort to as close to 50 degrees as possible.
Add dry hops to the fermentor before pitching yeast.
Ferment in 50's for about 5 days, let rise to high 60's for another week.
Keg carbonate.

Bought ingredients yesterday. Spilled some grain when milling. I think I got most of it scooped up and into the bag.

Brew day started at 4:30. Went well. Pretty much done by 8:30. 1.042 OG. Fermentor in garage to start. Pitched at 52 degrees.

Bubbling this morning. Tilt says 1.036 at 52. Turned up the controller to match the 52. I also added more water to cooler.

1.029. 52. Bubbling strong. Bumped temp up to 53.

Bubbling a little slower. Tilt says 1.018 at 53f. Anvil controller temp matches. Bumping up a three to 54.

Tilt says 1.015 at 55. Still bubbling a little. Bumping up a degree now. Will do it one more time later today if I remember. The controller still says 54, so maybe rising the temp won't really do anything. We'll see.

Kegged. Plus a bit extra for my current Franken-beer jug. 1.009 FG (matched the plan). Sample tastes how I remember this beer is supposed to. Not sure I got extra Saaz flavor out of the fermenter hops. Chilling in the beer fridge. Will probably add gelatin tomorrow.

Added in .5 tsp gelatin dissolved in .5 cup water. Spilled some. Oh well. Chilling in beer fridge. Gave a shot of co2.

Brew day for Galena Dave's, I decided to try a pint. Obviously not carbed yet, and still hazy. But the flavor is right on.

Keep giving keg shots of CO2. I'm wondering if I have a leak, because it seems like I'm adding more gas than I feel like I should.

Poured a pint. Carbonation is pretty close. Clarity is getting better, but still needs a bit more time. The color seems more golden than the paler yellow from last batch.

Compared with Mexican Logger. For some reason this is now hazy again. Not as crisp as Ska's. Not as much sulfur. Darker in color. Hop flavor is about the same. I think I need to brew this again before Mexican Logger season ends. Might add in some flaked corn. Watch the mash pH as well.

Picked up ingredients on Wednesday. Made starter on Thursday. Will be brewing this weekend.

Filled Anvil Foundry with almost 8 gallons of water. Set it to start heating to 160 starting around 3am.

Brew day went fine. It was nice getting up to having the strike water at the right temp. Getting to boil took quite awhile. My brew house efficiency was better than expected. OG 1.042. No signs of fermentation yet. Anvil set to 52.

Took a tiny sample out of spigot. Very cloudy. Flavor is good despite the yeast soup I got. Hopefully yeast will continue to settle between now and kegging.

Another sample from the spigot. Not as cloudy, but still hazy. Flavor is awesome, although I would like a bit more saaz flavor.

Kegged. Clearer than the spigot samples I took, but still will need to give it some gelatin. FG came out at 1.010. Filled 3/4 of a gallon jug in addition to the keg. I like the flavor. I think the hops come across better than my samples from the fermentor, but still not quite as much saaz hop flavor as I was hoping for. I think next time I make this, I'll add more hops.

Pale and fairly fizzy at this point. Clarity is better, but not quite where I want it. I think it may clear up more over next few days. Great flavor.

Yeah. Delicious. Pretty sure this beer won't last long. The Beer Model likes it too. I had to chastise her for taking some of this instead of her pumpkin beer.

Clarity is awesome. Perfect Mexican lager. I feel like I need this beer on tap 100% of the time.

Killed the keg. Love this beer. Think I'll be tweaking this recipe throughout 2021.

Been thinking about new names for this beer. At the moment, I'm thinking Sin Lima (without lime) Mexican Lager.
