Recipe Notes

Bring 10 cups water with UME & LME to boil. Add hops to boil at specified times. Add honey for last 5 minutes.
Cool, add to fermenter and pitch as usual.
Ferment for 2 weeks.

11/09/2009 Mon Finalized the recipe.  Raspberry beer without raspberries.  Scheduled to make this around Thanksgiving, but it is likely that I start it before the scheduled date.
11/15/2009 Sun Snowy Sunday so I mixed this up ahead of schedule.  Used an old packet of yeast in the boil at about 15 minutes as a sort of yeast nutrient.  Also, pitched two packets of Mr. Beer Yeast instead of one.  Added honey at about 10 minutes instead of 5.
11/29/2009 Sun Bottled with 2.5oz cane sugar in 3 liter and 17 12 oz bottles.  I measured FG right at 1.020 @70, so that makes it more like 1.021.  5 points higher than expected.  Hope this does not mean I'm going to get bottle bombs.  Not going to worry about it since this is my first FG ever.  Beer tasted ready.  Like Wetta only more Saazy and Perley than Goldingy.  Should be a good substitute for Wetta at our little Christmas get-together.
12/15/2009 Tues Moved into conditioning cooler.  Placed a couple in the beer fridge to taste either Thursday or this weekend.
12/18/2009 Fri Had the two from the beer fridge.  Much better without the raspberry extract taste.  I like the body and the balance.  Decent head.  Nice deep gold color.  Just the right amount of spiciness from the Perle and Saaz hops.  Really a nice compliment to the SheppyBrew line up between the Wetta blonde and the Phat & Tyred.
12/19/2009 Sat Discovered I had forgotten to put 4 12 oz and one liter bottle into the conditioning cooler.  Put these in the beer fridge to start chilling for next week.
12/29/2009 Tues Put most of the rest of these in the fridge.
01/03/2010 Sun Had one while watching the stupid Broncos lose to Kansas City.  The game left a horrible taste in my mouth, but this beer was wonderful.  There is just a bit of sweetness from this brew which (IMHO) is perfectly balanced with the hops.  This combination of Saaz, Perle, and HCCD really gives it an almost fruity taste profile.  If I brew this again, I do not think I will make any changes.
01/08/2010 Fri My wife had some.  She seems to like it.  Told me that she likes the amount of berry in this one.  Interesting considering it has none.
01/11/2010 Mon Went through my inventory today.  Everything was close (some I even had more than I thought) except this beer.  Apparently, my wife has been drinking more than I knew about.

Recipe Notes

Bring DME to a boil in 8 cups water.  Blend the fruit, and add to the boil just long enough to kill nasty organisms.  Add honey to the boil as well.

Batch Notes

Meant to use 1/2 cup honey, but only had 1/3 cup. Blended the fruit and put it in a hop sack. Will not bother with the hop sack next time.

03/01/2009 Sunday Mixed up the batch.  Only had 1/3 cup honey.  Blended the raspberries and put them in a hop sack.  Next time I will not bother with the hop sack.  The fruit went right through.
03/13/2009 Fri Tried a taste.  Actually, it is not bad.  The raspberry is there, but subtle.  Actually, I think it may be about ready to bottle.  Don't think I will give it a whole week of fermentation.
03/22/2009 Sun Well, it looks like I did give it another week.  I had my wife taste a sample so she could tell me if she thought it needed more raspberry taste.  She said it did not need any more, but I added 1/2 tbsp of raspberry extract to a little less than 1/2 cup sugar.  This was my first "batch prime".  We will have to see how the carbonation turns out.
04/05/2009 Sun Put bottles in the fridge for cold conditioning.
05/02/2009 Sat Tried on our Romantic Weekend in Estes Park.  The beer is pretty good, although I think maybe the raspberry is too subtle.  Tracy says she likes it ok although it is not her favorite beer.  I probably will not do anymore light fruity beers.
06/09/2009 Tues This beer is just not getting any better.  The problem is, it cannot decide if it want to be a fruity beer or a real beer.  I really am going to stay away from fruit flavory beers.
07/09/2009 Thur Opened 2.  The first was a gusher.  When I finally got it in the glass, I noticed that it has an unusual number of particles in it.  It was actually pretty cool looking, but I ended up pouring that one out.  The second was normal.  Still tastes the same.  Ok I guess.  Not great though.  I really need to get rid of these.
09/04/2009 Fri Tried one more.  Got to thinking that this would probably be a good beer if only I could get rid of that raspberry extract taste.  I think maybe I will make this exact same recipe without the raspberry some day.
10/02/2009 Fri Tried another while brewing Tommy Hawk APA.  Still the same.  Eventually, I'll get rid of all these.
10/17/2009 Sat Finally drank the last liter bottle.  Not as bad after drinking several other beers.  I am so glad this is finally gone.
