She Who Must Be Obeyed Wheat Archive

  She Who Must Be Obeyed Wheat is basically a combination of 3 of the Beer Model's favorite beers. It uses Marris Otter like Laser Salt. It has a pretty good portion of Biscuit and Caramunich like Buckwheat's BPA. It uses Tettnang, one of the hops from Ello Poppet. It is a wheat beer like the wheat beers that she likes so much.

It turned out so awesome that I decided to make it again with no changes to the recipe other than slightly lower Alpha in the Tettnang hops.

Batch sparge with 2 steps (2.07gal, 3.88gal) of 168.0 F water
Recipe Notes
 
Make 2 liter yeast starter at least 2 days before brew day.
Mash and boil as ingredients called.
Cool the wort to as close to 60 degrees as possible. Pitch the starter yeast.
Cool fermentation on first day only. Let temperature rise as it wants after that.
Ferment 2 weeks.
Keg.
Carbonate to 2.5 volumes.

Bought the ingredients yesterday. Don't really have time (or DME) for a starter, so I am just going to pitch the vial of yeast. I think it will be fine for this low an OG beer. Perhaps it will increase some of the nutty esters I like so much in this beer.

Brewed 1/12. Fermentation started very low ... 58 or so. Didn't control at all and got up to the upper 60's pretty quick. Finished the active fermentation in a few days. Beer looks good currently.

Kegged yesterday. 1.010 FG puts this beer right at 5% ABV. Tastes just like I remember batch 1 tasting. Pressurized up to 30 psi and then put outside in the cold. Have to remember to put into the keggerator.

Put into the keggerator yesterday after chilling outside for a couple of days. It felt like the beer might have been slightly slushy. Should be ok. Set pressure to around 15 psi. Hope to drink this weekend, especially Super Bowl Sunday.

Tried last night. Needs carbonation, but it is getting there. Tasting good other than needing more bubbles.

Still not quite where I want the carbonation. Had the gas off for a couple days during the week. Back on and at 15psi.

Carbonation is still way too low. I've has the gas at 15psi for long enough that this should be over-carbonated. Turned the pressure up to 20. Will see what happens.

Increasing the psi seems like it was the right idea. Finally getting a little head on a little sample of this beer.

Keg died last night. Sort of surprised it lasted as long as it did. Was still a nucw beer to have on tap.

Brew day yesterday went great (see SWMBO #HomeBrew Brew-Day). Active fermentation at 60 degrees early morning. Put in a blow-off tube.

70. Still bubbling, but slowing down. Obviously did not need the blow-off tube, so I took it out.

Kegged.1.010 fg. That makes it 5% abv. Don't know what the wife will think, but I really like the flavor. Has a bit of almond. Yummy.

Tried this. Seems to be carbonated, but I'll keep it under pressure for a bit longer. Great flavor. Sort of Buckwheat meets Summer Lovin. SWMBO likes it too.

All gone. This was really a good beer. Probably will have to make this one again. Loved the flavor ... a bit of almond.
