Galena Dave's Pale Lager (previous batches)

My brother-in-law, Dave, lives in Galena, Illinois with his wife, my wife's sister.

Late in 2019, we visited the area and Dave mentioned that he had harvested wild hops from his yard. He doesn't brew, but knows that I do, and he offered to let me have some.

So, he brought me some to bring home.

We have no idea what type of hops these are. 

Dave speculated that maybe they are Galena Hops, which I suppose is possible, but I don't think it is any more likely than other types.

I did learn from Dave that apparently the beer "Red Stripe" was first brewed in Galena, Illinois. It is very possible that these hops came from the hop farms of the original Red Stripe. 

I don't really know what hops that Red Stripe uses. I suspect something German like Hallertau Hersbrucker. 

Anyway ... I took the hops, and decided to basically do a "Pre-prohibition" pale lager to put them in.

Since Dave comes from Galena, I threw some Galena hops in at 15 minutes.

Make a starter a day or two before brew day.
10g gypsum in the mash water. This should bring Denver water profile (as defined by BeerSmith) to
Ca=87,Mg=8,Na=21,SO4=185,Cl=23,HCO3=104
Brew as directed from recipe.
Cool wort to as close to 50 degrees as possible.
Ferment at 55 for a week, let rise to high 60's for another week.
Keg carbonate.

Should be getting Dave's hops today via USPS. Ordered the rest of the ingredients. Should brew this weekend.

Brew day went well. Into fermentor around 9. Cleaned up shortly after. Pitched 9:45 at 59 tilt and 53 anvil. OG right at expected 1.054.

Started bubbling sometime overnight. Tilt says 1.049 at 51 degrees. Raising anvil controller to 52.

Took a gravity sample. 1.011 FG. Nice fruity hop flavor. Maybe a bit of earthy aroma that doesnt come through in the taste. Pale gold color. Not clear.

So ... I like this beer, but I think I'd like it more without the wild hops. Sort of wish I had two batches one with one without to compare to make sure I know what I'm getting from Dave's hops. Clarity is improving, but still not crystal clear. Carbonation is about perfect.

Last night when tilt read 1.025 and 51 degrees, I moved fermentor from garage to basement. The garage temp has been perfect so far. Wish I could count on this constant range. 52 to 49 without anything more than ambient cooling.

7am 1.022 at 59 degrees. 5pm 1.014 64 degrees. Nicely bubbling.

Down to 1.010 gravity at 66F. Still bubbling pretty good so it will fall a few more points. Already lower than expected. Can't wait to see how this turns out.

Tilt says 1.003 and 65. Not much bubbling, and I assume this beer is pretty much done.

Kegged. 1.012 FG makes this a 5.4% ABV Beer. A bit hazy. Very tasty. Not sure how much I'm getting from Dave's hops and how much I'm getting from Galena hops. Not sure it matters. Chilling the beer now. Will probably add gelatin to help clarify.

Beer is chilled. Tried a pint. Not at all carbonated. Still outside in the cold under high pressure. IPL - like flavor. Quite a bit hazy.

The clarity is great. The hops flavor has certainly dropped some, but I feel like the wild hop flavor might be shining through a bit more now. Nice tasting beer. At some point, I'd like to try this recipe without the Dave hops.
